The story of Kolucan is deeply personal for co-owner and chef Gino Calleja. Named in tribute to his hometown of San Lucas Colucán, the restaurant reflects childhood memories of cooking with his mother, Reyna Europa, whose salsa asada still inspires Kolucan’s kitchen today. After emigrating from Puebla to New York and later settling in Sarasota, Calleja built his career at top restaurants before opening Reyna’s Taqueria, followed by this next chapter.
Alongside partner and fellow chef José Rojas, Calleja brings creativity and reverence to a menu that highlights the diversity of Mexican cuisine. From shareable Parrillada de Sonora platters to elegant seafood preparations, Kolucan balances authenticity with innovation. The restaurant’s commitment extends beyond food to atmosphere, featuring original works by local artists in the Frida Lounge.
